yeah… check out the picture. I actually cooked that!
Buffalo roasts are becoming one of my favorite foods
because they’re so easy to prepare and oh-so-good! I
throw mine in a crock pot with some pineapple/apple
juice and water, onion, carrots, and potatoes and turn
it on low when I go to sleep at night. By the morning…
well, let’s just say that I can’t resist eating roast
for breakfast! No knife required for this meat! I’d
guesstimate that one of the roasts would feed
approximately 4 adults, or
one L.C. Ratchford for three
meals in one day!

Buffalo KC Strip Steaks
Approximately 8 oz
each

you…
Cooking buffalo is pretty much the same as beef. You
just have to remember not to over-cook it because it’s
so lean. My favorite way to cook these steaks is in one
of those small (personal-sized) toaster ovens because
it’s fast and clean-up is easy. I place two seasoned
steaks in the little oven and turn the dial to broil. 8
minutes on side one, 7 minutes on side two and it’s
ready to go at medium-well if you like it that way.

Packages 100% Buffalo Hotdogs

No
animals were hurt in the snapping of this photo, but a
human finger was almost snatched off!

You cook these hotdogs by boiling, grilling, or (my
favorite) by popping them in the trusty microwave. Much
better alternative for your kids than the pork and beef
by-product filled hotdogs you’ll get in the supermarket.

Packages 100% Buffalo Breakfast Sausage

Well,
don’t plan on making any gravy with the grease drippings
from this breakfast sausage, because there won’t be
any! Remember… buffalo is so much leaner than beef and
pork that you won’t have any grease when preparing this
breakfast sausage. If there’s anything bad to say about
buffalo, it’s that it can get dry because there’s very
little fat in it. (And we don’t add any because we want
to keep it natural.) Just be sure not to overcook it.
When cooking any buffalo product for the first time,
check it regularly to remove it from heat at exactly the
right time.

Look
ma! No grease! You can substitute this healthy buffalo
meat in any dish that calls for ground beef. You won’t
be sorry! Here at the Ratchford
house, I like to use it for lasagna, pizza, tacos, chili
– you name it! I’ve taken a picture of one of my pizza
creations to the left. I’m so proud of myself! Of
course, a good old fashioned buffalo burger thrown on
the grill shouldn’t be forgotten!

Same
goes for the ground elk as the ground buffalo. Just
substitute it in any dish that calls for ground beef.
